Barrier Beauties is breaking new ground as one of the first sustainable oyster farms in Texas. Founded by Hannah Kaplan and her father, Barrier Beauties is part of the Cultivated Oyster Mariculture program, which allows oyster farmers to grow oysters in gear that floats at the top of the water column, giving them control over the way the oysters grow.

Unlike traditional Gulf Coast oysters with longer shells, Barrier Beauties has a unique deep shell, thanks to being farm-raised in the Gulf. Texas was one of the last coastal states to allow oyster farming in 2019, and Kaplan believes that changes need to come to the industry through legislation.

Despite facing red tape and paperwork in getting their business started, Kaplan’s determination and excitement for the end result kept her going. She credits her stubbornness for pushing through and achieving success with Barrier Beauties. She is also supported by a village of women in the industry, including farmers, marine biologists, and gear suppliers, who all contribute to the success of Barrier Beauties.

Now, Barrier Beauties oysters are sold all across Texas, including at Josephine’s in downtown Houston. Executive chef Lucas McKinney praises Kaplan for being a driving force in the industry as a young female entrepreneur. Kaplan has truly made “Barrier Beauties” her pearl in the oyster farming world.
